Treasure trove of benefits and variety at the table : a fourteenth-century Egyptian cookbook /

: The Kanz al-fawāʾid fī tanwīʿ al-mawāʾid , a fourteenth-century cookbook, is unique for its variety and comprehensive coverage of contemporary Egyptian cuisine. It includes, in addition to instructions for the cook, a treasure trove of 830 recipes of dishes, digestives, refreshing beverages, and more. It is the only surviving cookbook from a period when Cairo was a flourishing metropolis and a cultural haven for people of diverse ethnicities and nationalities. Now available for the first time in English, it has been meticulously translated and supplemented with a comprehensive introduction, glossary, and 117 color illustrations to initiate readers into the world of the Kanz al-fawāʾid . The twenty-two modern adaptations of Kanz recipes will inspire further experimentations. It is a valuable resource for scholars of medieval material culture, and for all lovers of good food and cookbooks.

After orientalism : critical perspectives on western agency and eastern re-appropriations /

: The debate on Orientalism began some fifty years ago in the wake of decolonization. While initially considered a turning point, Edward Said's Orientalism (1978) was in fact part of a larger academic endeavor - the political critique of "colonial science" - that had already significantly impacted the humanities and social sciences. In a recent attempt to broaden the debate, the papers collected in this volume, offered at various seminars and an international symposium held in Paris in 2010-2011, critically examine whether Orientalism, as knowledge and as creative expression, was in fact fundamentally subservient to Western domination. By raising new issues, the papers shift the focus from the center to the peripheries, thus analyzing the impact on local societies of a major intellectual and institutional movement that necessarily changed not only their world, but the ways in which they represented their world. World history, which assumes a plurality of perspectives, leads us to observe that the Saidian critique applies to powers other than Western European ones - three case studies are considered here: the Ottoman, Russian (and Soviet), and Chinese empires. Other essays in this volume proceed to analyze how post-independence states have made use of the tremendous accumulation of knowledge and representations inherited from previous colonial regimes for the sake of national identity, as well as how scholars change and adapt what was once a hegemonic discourse for their own purposes. What emerges is a new landscape in which to situate research on non-Western cultures and societies, and a road-map leading readers beyond the restrictive dichotomy of a confrontation between West and East. Qāmūs al-baḥrayn : Matn-i kalāmi-yi fārsi-yi taʾlīf bih sāl-i 814 qamarī /

: Muḥammad Abu ʼl-Faḍl Muḥammad's (fl. ca. 800/1400) Persian Qāmūs al-baḥrayn was written in 814/1411. About the author's life and times nothing is known other than that his nickname 'Ḥamīd Muftī' points at a certain level of expertise in the legal profession. Being a theological summa, the Qāmūs al-baḥrayn stands in a long tradition. The author used numerous theological and philosophical sources, referring explicitly to such authorities as Avicenna (d. 428/1037), Suhrawardī (d. 587/1191), Fakhr al-Dīn Rāzī (d. 606/1210), and Naṣīr al-Dīn Ṭūsī (d. 672/1274). The work contains so many obvious borrowings from Rāzī that the Qāmūs al-baḥrayn is factually an exposition of his thought. In the edition, a special effort was made to point this out in each case where a concrete reference could be given. There are few theological summae in Persian; readers of Persian will therefore be delighted to discover this comprehensive work and its mellifluous style of composition.
